I'm alive




Aunt Nancy's Coleslaw
Diners, Drive-Ins, and Dives Copyright 2008

1 (8-ounce) can chunk unsweetened pineapple, in juices, strained
1 carrot, peeled and roughly chopped
1 cup mayonnaise
1/3 cup sugar
2 teaspoons white wine vinegar
1 teaspoon celery seeds
1½ pounds green cabbage, shredded
Kosher salt
Freshly ground black pepper

1. Put the pineapple and carrots into a food processor and pulse until finely chopped.
2. Stir together the mayonnaise, sugar, vinegar, and celery seeds in a large bowl.
3. Add the cabbage and the pineapple-carrot mixture, and toss until evenly coated. Season to taste with salt and pepper.
4. This slaw is best if made several hours or the day before so the flavors can come together. Keep covered in the refrigerator until ready to serve.

Sorry that I've been MIA but it was a crazy week. My son caught a nasty stomach bug, my computer was sick, I had to postpone my son's birthday party due to bad weather. I'm just ready to relax and get back into my regular groove now.

This was one of the few new recipes I've made lately. I wasn't going to blog about another coleslaw recipe, after making several of them here, but this one was so good I couldn't possibly not share it with you. The flavors were so nicely balanced. It was sweet of course but I like my coleslaw sweet. I will without a doubt be making this recipe again.

I love watching Diners, Drive-Ins and Dives. I expected the book to be similar to the Deen Bros. Roadtrip book, which didn't include the recipes of the businesses they visited, but it included recipes 'inspired by' their travels. The Deen Bros. book has good recipes but some were more loosely inspired than others. The recipes in Guy's book are pretty close to the recipes I've seen on the show. I'm sure they're not exact and there aren't as many as I would like but I love that they did try to give a close approximation of the restaurant recipes.

Well I'm back but not quite 100% yet. I was busy with my son's party all weekend since we moved it to Sunday so I still haven't had the recuperation time that I need to get back into the swing of things but I'm getting there.

Probably better than you are doing, with all that you had going on! We've missed you, glad that you're back. I would really like that cole slaw also and intend to make it (minus the food processor, darn it). I really need to get one of those. I enjoy watching "Diners, Drive-Ins and Dives". It drives me crazy wishing I could have a taste of the food. Have you seen the new show on Sunday nights "Ultimate Recipe Showdown" I think is the name of it. Guy Fieri hosts that also. I love competitive cooking shows.

I love that show too. Can't watch it when I'm hungry though. I'll have to look for that cookbook.

If you are enjoying Diners, Drive-Ins and Dives, you should check out Man V. Food on the Travel Channel. It's along the same vein, although the host tackles eating challenges and visits notorious pig-out places. Sometimes he eats so much that it borders on disgusting, but the majority of the time, it's very funny.

Glad to see you back! I'm sick of snow but otherwise good :).

Well, I'm ok. Still sick, can't shake this cold. I can't wait to try this coleslaw recipe though. I've been looking for a pineapple coleslaw recipe for more than a year, but have been too lazy to come up with my own. I had no idea that Dines Drive Ins and Dives show had a cookbook! I'm going to have to look for it, most of the food on that show makes me drool.

:-) I'm pretty good. Getting a taste of what new mom's feel like (at least every 4th night) when I'm on call! We get something like 1-3 hours of sleep those nights!

My husband loves coleslaw. I've never made it with pineapple juice, just a lemon squeeze! What a neat idea :).

Glad to hear you're doing better. I'm okay, just wish things would slow down a bit.
I have the Diners Drive Ins and Dives cookbook and made the American Chop Suey out of it (wonderful). I'm a bit disappointed that a lot of my favorite places from the show didn't have recipes, but I guess that just means I'll have to go there in person to eat!
