Just okay apple bread
Apple-Cinnamon Oatmeal Bread
Blue Ribbon USA Copyright 2007
1/4 cup butter, softened
1 cup white sugar
1 cup chunky applesauce
1 1/2 teaspoons ground cinnamon
2 packets instant apple cinnamon oatmeal (single serving size)
2 eggs
1 teaspoon baking soda
1 1/2 cups all-purpose flour
Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a 9x5 inch loaf pan.
In a large bowl, cream together the butter and sugar until light and fluffy. Mix in applesauce, cinnamon and one packet oatmeal. Stir in the eggs one at a time, beating well with each addition. Mix in the baking soda and flour. Pour batter into prepared pan and sprinkle with remaining packet of oatmeal.
Bake in preheated oven for 60 minutes, until a toothpick inserted into center of the loaf comes out clean.

I had some packets of instant apple-cinnamon oatmeal that no one was every going to eat and I also had a cup of chunky applesauce leftover from something so this recipe seemed perfect.
It was good, in that lower-fat sort of way. The oatmeal on top got way too dark, burned actually. I suspect my oven may be on it's last legs but I'm not sure if that was the problem. Little bits of apple and oats are bound to darken at 350 degrees for an hour. No problem, I just brushed most of the topping right off.
This wasn't anything that special that I would go out of my way to make it again. There are too many other apple bread recipes out there. This recipe supposedly won a blue ribbon at a fair in Rhode Island (that is the theme of this cookbook).
I registered my son for kindergarten yesterday. I'm sad but looking forward to having one less child in daycare, especially after paying my grocery bill last night. Yikes! I bought 2 packages of diapers, a package of Underjams, a large bag of baby wipes and our first can of formula (bought just in case since my milk supply is dwindling). That stuff adds up! They aren't exactly groceries (besides the formula) but it still bothers me when I spend so much.
Question of the Day: Do you remember registering for kindergarten? I have the vaguest recollection (it was a LONG time ago) but it was very similar to my son's experience yesterday.

I don't remember registering for kindergarten, and crap, now that you mention it, I barely remember registering my own kids! I'm freaking out about the time thing, too, as my son is a freshman and my daughter is in 8th grade. It just struck me the other day that shortly BOTH my kids will be in highschool. And I'm only 37!
I just discovered your blog and am really enjoying your posts. I hate when I try a new recipe and it's just 'okay'. I make a note in my cookbooks when I like or don't like how the recipe tastes so I don't waste my time (and money) again. I don't remember registering for KG, but I do remember that the kindergarten room was Huge, with a corky floor that left marks from the women's high-heeled shoes; and a piano in the room where the teacher would sit and play songs as we napped.
My dad was just telling me not too long ago that when I went through kindergarten screening, I didn't pass the first time and it was discovered that I couldn't hear well enough. I got ear tubes and I passed the second time... I was excited when my first child went to kindergarten (she was more than ready) and sad when my second did! Already dreading #3 going this fall... just for me though, I know he'll love it. Sorry the recipe was disappointing, I like that it uses instant oatmeal though - always have that on hand around here!
I also just discovered your blog, and being a cookbook junkie myself, I am looking forward to visiting often. Did I mention the nine boxes of cookbooks I have, LOL!! I sort of remember registering for kindergarten, I was one of those early December kids and I was just at the cut off date. In order to get into kindergarten a year earlier, I remember them asking me all kinds of questions; is this bigger than that, do you know your ABC's, etc. I must have done OK as I started with all my neighborhood friends.
Another newbie that just found your list. Maybe there should be a cookbooks anonymous...cookbook!
Don't remember registering for kindergarten, that was over (cough,cough)years ago but two incidents are highly memorable, my first crush and getting bit by a prairie dog. Ended up having to get the origional rabies series because no one would believe a well prairie dog would allow me to pick it up!
I don't remember my first day of school (dark ages), but I remember the first day of both children (ages 41 and 43). They seemed fine and I had teary eyes for half the way home.
