I like to mix different spicy things to get a well rounded effect. Like small thai peppers for an instant zing, jalapenos for a slow creeping burn, and black pepper for bite with a lingering sourness. The only peppers I cannot handle are habanero types, I get instant blisters in my mouth.<BR/><BR/>I used to get those from fresh cayenne peppers, but can use those now.
