Orange Mandarin Chicken

2 teaspoons dark sesame oil I forgot this!
4 (4-ounce) skinless, boneless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (11-ounce) can mandarin oranges in light syrup, undrained
1/2 cup chopped green onions
1 tablespoon finely chopped seeded jalapeño pepper
1 teaspoon bottled minced garlic
1/2 cup fat-free, less-sodium chicken broth
1 tablespoon low-sodium soy sauce
2 teaspoons cornstarch
Heat oil in a large nonstick skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add chicken to pan; cook 4 minutes on each side or until browned.
While chicken cooks, drain oranges in a colander over a bowl, reserving 2 tablespoons liquid. Add oranges, 2 tablespoons liquid, onions, jalapeño, and garlic to pan. Reduce heat; simmer 2 minutes. Combine broth, soy sauce, and cornstarch; add to pan. Bring to a boil; cook 1 minute or until slightly thickened.
I cut the chicken into smaller pieces. I added a bit more soy sauce and touch of the seasoning from the ramen packet.

I made the mistake of reading the reviews of this recipe. Some loved it, many thought it bland and felt like something was missing. It was too late to change the menu so I went forth. I too felt something was missing - and it was! I forgot the sesame oil. By the time I realized it, the dish was plated. Oh well. I ended up added some of the ramen seasoning packet and a tad more soy sauce and it was good but nothing spectacular. My oranges fell apart and I think that helped.
I served this over ramen noodles and my son was happy.
I'll have to keep this short. We have our first kindergarten field trip today. I'd be more excited about it if it wasn't for the boring non-refrigerated lunch I had to pack.
Question of the Day: Where did you take field trips when you were in school? I can remember going to a farm, a state park, an airport and a local television station. My school was not very big on field trips because after grammar school I don't remember any field trips until high school, when my French class went to NYC twice and Philadelphia once.
We didn't have many field trips. In elementary school I remember going on only one, to a book fair at a university an hour away.
ReplyDeleteI don't remember having any field trips in high school, although some of my extra-curriculars involved competitions in other places. I guess those were the closest thing to field trips that we had "back in the day".
I remember lots of trips: rubber factories, circus, zoo, historical homes...the one that left the most lasting impression was the trip to the local potato chip and salty snack factory. Seeing a worker dressed in a "space suit" in a room of popcorn with a garden hose, spraying "cheddar cheese" all over the corn was just the coolest!!! The bag of fresh, warm chips at the end was pretty nice, too. Of course, that was in the mid 1960's...I'm sure times have changed!
ReplyDeleteI live and grew up in the Detroit area. In elementary, we took trips to The Henry Ford museum and Greenfield Village, the Detroit Science Center, the zoo, and the Jiffy Mix factory in Chelsea, Michigan. Our kids don't go on many field trips these days, maybe one a year, although I don't recall my 1st grader going on any trips last year.

I went to a private school from 2nd grade to senior year. my school to us to the Phoenix Symphony twice a year, once each semester. in 2nd grade, we went to the Hall of Flame, the fire museum. in 5th grade, we went to the Desert Botanical Gardens. in junior high, I remember going to Montezuma's Castle/Well. my senior trip was to DC. the last day of each school year, they bused the entire school out to a big park and divided us into 4 teams and we had a huge water fight.
