Spicy Honey-Brushed Chicken Thighs

2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt (too much, IMO)
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 skinless, boneless chicken thighs
Cooking spray
6 tablespoons honey
2 teaspoons cider vinegar
Preheat broiler.
Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute
Yield:4 servings (serving size: 2 chicken thighs)

I'll be honest, I initially wasn't that excited about this recipe. Why did I even select it? Well, it required no extra ingredients. Also, since discovering the joys of Costco's boneless, skinless chicken thighs, I'm always on the lookout for recipes that call for them.
Several times I had these on the menu but they got pushed aside but the time had come to actually make them. Even though I couldn't work up any enthusiasm for this recipe, I remembered a similar one that surprised me - Honey-Glazed Spiced Pork Tenderloin - and I held hope that this would also pleasantly surprise me.
And it did! If fact, I enjoyed the chicken recipe even more than the pork recipe. I loved the mixture of honey and spices which is odd since chili powder and especially cumin can both sometimes be a turn off for me. Except for it being a bit too salty, I thought this recipe was awesome and I thrilled with how quickly and evenly the chicken thighs cooked using the broil method. I've always been a bit broiler-shy for cooking meats that need to be thoroughly cooked.

This was a wonderful recipe! Thanks for sharing. I'm always cautious about broiling because my oven has a LO & HI setting for Broil. I never know which to choose, so I just set it on high to begin, low in the middle, and turned back to high at the end. Quick & tasty!
ReplyDeleteJust tried this, omitting the ground red pepper and used the full amount of chili pepper, using Indian Red Chili Pepper, which was WAY spicy! But it was awesome with the other spices and especially well balanced with the honey/vinegar. I broiled for six or seven minutes on each side, then did 1.5 minutes after brushing, because I am paranoid about undercooked chicken. It came out juicy, tender, and delicious. I will do this again, but using only half the pepper.
ReplyDeleteThanks for the recipe! I made this almost as written- only 5 thighs, used 3/4 tsp salt and added 1/2 tsp of coarsely ground black pepper. Had to trim up the chicken thighs quite a bit (not from Costco!) but it was still fast and delicious. My husband was making "yum yum" noises as he was eating. Very juicy. First time on this blog, now I'm excited to see what other finds are here!

ReplyDeleteThis is one of my new favorites! I made it tonight with some modifications and it is pretty well my favorite chicken recipe now--I made mine in the toaster oven. Anything that can be cooked in a toaster oven has my heart, forever.

Interesting says to make sure chicken is cooked completely before applying honey glaze; yet then it says to keep turning it over and applying until the chicken is done?

Sorry - that was confusing since I added that note about making sure the chicken was done first and I didn't make it clear that it was my note (I usually do!). The glaze will be done too quickly to risk putting it on before you're sure the chicken is completely cooked.
ReplyDeletehi! i was looking for a fast dinner recipe using costco boneless chicken thighs and i came across your recipe. just made it tonight and it was a hit! thank you for sharing this. btw, i didn't have ground pepper flakes so i used chipotle powder. it gave a great smoky flavor. i also switched between the HI and LO settings on the broiler too, to prevent burning.

oops, its me, Anonymous again. i wanted to add that i kept turning the chicken every 5 min until i was pretty sure they were just about thoroughly cooked, and then added the glaze and had the broiler on HI for about 2 min each side.

ReplyDeleteI do. For chicken I position the rack a little lower in the oven so it cooks through before it burns.

Made this for the first time for my very picky 19-year-old daughter, who if I had told her the ingredients, would have turned up her nose. She doesn't like honey, or spicy things, and is not very experimental-Cumin? No way! She LOVED it, and vowed she would eat it again, even after I told her what was in it. I did find all cooking times went a little longer for me, just by a couple of minutes-delicious, and fast to throw together!

ReplyDeleteVery happy with this recipe! I didn't have any chili powder, but I have smoked paprika and used 3 tsp. of it. also added dried garlic flakes instead of the powdered garlic. I also used red pepper flakes instead of the powdered red pepper. It has great flavor and was so easy to prepare. I served it over Jasmine rice. this recipe is a keeper :)
ReplyDeleteThis was absolutely delicious!! I didn't have chili powder, so I used Cayenne pepper instead. I've never used the broiler to cook chicken before (I was afraid that it would be dry) but this was juicy, spicy and flavorful, just like my family likes it! I served it with whole wheat penne pasta tossed in pan seared spinach/kale. I can't wait to make this recipe again!

ReplyDeleteI just tried this recipe for dinner tonight. Great flavor with some kick! Frankly, it was a tad too spicy, so I'll halve the peppers/hot spices next go around. Also broiling was a bit of a problem; next time, I'll try baking it. Still, four stars from me! :)
ReplyDeleteWe did substitutions for salt, red pepper and paprika: McCormick Grill Mates Fiery 5 pepper. Also added Bittersweet Herb Farm's Picante Southwest Seasonings for more heat. Cooked it on the grill (hubby offered and I'm never turning a man down who offers to cook) and it was AMAZING! Thank you for sharing this :)
ReplyDeleteThis recipe is fabulous, added some soy marinade, but make sure to drain since it adds sodium big time! Also, on the side a cold bulgarian salad compliments it nicely. Do you have that recipe?

ReplyDeleteThis is probably the most delicious chicken ever to be made! I followed the recipe pretty closely - only cutting down the salt a bit and using fresh minced garlic versus powdered - and made 6 boneless skinless thighs for 4 of us, the only complaint was that I didn't make enough! I am a big fan of broiling, and love the way a good broiled piece of chicken can come out, but this recipe is the absolute best I have come across. I served it with herbed brown rice and ginger-honey steamed carrots - it was divine! Thanks for sharing :)

ReplyDeleteAlso I left off the red pepper because I thought it might be too spicy for my kids. Still good but I think it would have been better with more kick so I will give it a go next time.
Yummy! So easy and yummy. The next morning my husband was happy to bring leftovers to work. Made brown rice and steamed carrots. Great, easy weekday dinner!
ReplyDeleteI've made this several times and it's one of our favorites...my kids absolutely love it! We almost always set off the smoke detector in our apt but do better when we have a fan running in the kitchen. Amazing recipe!!!

ReplyDeleteWow...found this recipe and although I added a bit more to it, my family thought it was awesome !!! Basically the dry ingredients are nearly the same as the ones I use for my normal dry rub on ribs and pulled pork. Love the honey-vinegar addition !!!!
