Passing along an all-time favorite

Kansas Kids’ Cake
Treasury of Desserts Copyright 1993

¾ cup honey
½ cup (1 stick) butter, softened
¼ cup peanut butter
2 eggs
1 teaspoon vanilla
1 cup all-purpose flour
1 cup whole wheat flour
1 ½ teaspoons baking powder
¾ teaspoon baking soda
½ teaspoon salt
¾ cup buttermilk
Peanut Butter Topping

Preheat oven to 350 degrees F. Grease and lightly flour 13x9-inch baking pan.

Beat together honey, butter and peanut butter in large bowl until well blended. Blend in eggs and vanilla. Sift together dry ingredients; add to peanut butter mixture alternately with buttermilk, beating well after each addition. Pour into prepared pan. Prepare Peanut Butter Topping; sprinkle over batter.

Bake 25 to 30 minutes or until wooden toothpick inserted in center comes out clean. Cook on wire rack. Serve warm or at room temperature.

Peanut Butter Topping: Combine ¾ cup sugar, ½ cup peanut butter, and 2 tablespoons all-purpose flour in small bowl mixing until well blended. Stir in 1 cup semisweet chocolate chips.

This is a recipe that I LOVED. Of course the name made me think of the day I might make this for my kids but alas, with my firstborn's peanut allergy, that will never happen. So I'm passing this recipe along and really, really hoping that one (or more) of you will make this and share the results with the rest of us.

  2. It is peanut only? There are sooo many nut butters out there. For my niece, we can use soy nut butter, sunflower seed butter etc.

    I'll bet they'd still taste pretty good.

  3. It is only peanut but to avoid confusion we avoid it all (although I have enjoyed Sunbutter at work a few times). When he's older he can decide for himself.

  5. I love the sound of this cake. Mmmmm... peanut butter and chocolate. I'm drooling. However, it'll have to wait till the school holidays - both schools in our lives (the one the kids attend and the one hubby works at) are nut free because of kids with severe allergies, so can't send it along for morning tea with anyone. But... give me a couple of weeks and I'll let you know how it turned out :)

    My son grew out of milk, egg and peanut allergies (slowly, one at a time) so there is still hope!
