Easy clean up
Grilled Cuban Sandwiches
The Best of Cooking Light Copyright 2004
2 tablespoons Dijon mustard
1 (8-ounce) loaf French bread, cut in half horizontally
6 ounces reduced-fat Swiss cheese, thinly sliced
6 ounces deli-sliced ham
8 sandwich-sliced dill pickles I used dill chips
Cooking spray
1. Spread mustard evenly over cut sides of bread. Arrange half of cheese and half of ham on bottom half of loaf; top with pickle slices. Repeat layers with remaining ham and cheese; cover with top half of loaf. Cut into quarters.
2. Heat a large heavy skillet coated with cooking spray over medium-high heat. Add sandwiches; press with a heavy skillet. Cook 2 minutes on each side.
Yield: 4 servings. Per serving: 335 calories, 11 g fat, 23.1 g protein, 36 g carbs, 3 g fiber, 43 mg chol, 1301 mg sodium

Okay, so this isn't very authentic - a real Cuban would have sliced pork too - but that's just as well. Delis don't sell pork loin in this area. I could buy sliced pork at the deli when I lived in Philly and it's popular in northeast PA where I grew up but I've yet to find it here (and I've lived in this area since 1997). I swear Boar's Head used to have a roasted pork in their product line but they must have discontinued it. I don't see it in their DigiCatessan.
This was an easy dinner that didn't require many dishes or utensils to prepare. I had some deli potato salad leftover from the weekend that I served along side of this.
I'm glad I didn't plan any grilled meals this week. We're getting quite a bit of rain.
Question of the Day: How's your weather? Do you still grill in not-so-nice weather, if you have an outdoor grill?
Mid-90's and dry, here. DH said it was 107* when he passed through Kingsville yesterday. That's not too far from us. We've had some good rain lately, but need lots more.
ReplyDeleteI have never grilled in my life. DH doesn't do it much any more either. But definately not if it's rainy.
Our weather has been variable, as per normal LOL. I am more likely to use our grill even in bad weather than DH is. And I like to use it in winter, which he won't do. That's okay, I don't mind. I actually like cooking on the grill.
ReplyDeleteamazing that our dinky town carries pork loin in the deli, but its expensive. We don't have boar's head though. I brought home 1 1/2lbs of turkey from MI. I love Boar's head.
ReplyDeleteWe have deli pork loin here in the case for purchase anytime I've looked but I can't think of a time I actually bought any.
ReplyDeleteIt in the high 80's here and rainy like no tomorrow at the moment. That is alright, we needed it and at least it isn't the weekend!
We grill no matter what the temp...I've even seen DH wheel the 'Q up to the backdoor in subzero weather to cook burgers without actually having to step outside!
I still have'nt got around to buying a grill yet. I want an indoor grill though because I don't really enjoy cooking outside in the heat with the bugs.
ReplyDeleteWeather here is hot, usually mid 90's and up. We (I use the term loosely - not me) grill anytime, even if it's hot. Being South Texans, we're addicted. We lived in Wyoming one year and he was barbecuing with the snow falling!

It's smoking hot here. We've used the bbq for dinner the past 3 days. It keeps the kitchen a little cooler, but it doesn't feel to good standing over the hot bbq when it's 35'C out!
