Yummy pork chops
Mom’s Smothered Pork Chops
Delicious and Dependable Slow Cooker Recipes Copyright 2002
¼ cup all-purpose flour
½ tsp salt
¼ tsp freshly ground pepper
4 to 6 pork shoulder butt chops, about 2 to 3 pounds I used loin chops
2 tbsp vegetable oil
2 onions, finely chopped
2 cloves garlic, minced
½ cup tomato-based chili sauce
2 tbsp cider vinegar
2 tbsp packed brown sugar
1 tbsp Worcestershire sauce
1 tsp dry mustard
1. On a plate, combine flour, salt and black pepper. Dredge pork in mixture, coating both sides.
2. In a nonstick skillet, heat oil over medium heat. Add pork, in batches, and brown on both sides. Transfer to slow cooker stoneware.
3. Add onion to pan, adding more oil if necessary, and cook, stirring, until softened. Add garlic and cook, stirring, for minute. Stir in chili sauce, vinegar, brown sugar, Worcestershire sauce and mustard. Bring to a boil.
4. Pour sauce over pork. Cover and cook on LOW for 8 hours or on HIGH for 4 hours. (for loin cut reduce cooking time to 4 to 5 hours on LOW or 2 to 2 ½ hours on HIGH)
Serves 4 to 6.

Pork loin can be risky in the crockpot but the author said I could use loin chops so I did. It was a close call. It was almost too dry but it didn't quite pass the point of being enjoyable. The sauce was excellent so that helped a lot.
I'm really enjoying this cookbook. The author also wrote 150 Best Slow Cooker Recipes. I have to get my hands on that one.
I'm still washing dishes and I'm tired of it! Hopefully it will get fixed Saturday.

this looks really good. I need to bust out the slow cooker again and start firing up some food. Now I know where to look for recipes.
ReplyDeleteI do have a dishwasher, although I must admit that I don't mind washing dishes (the cooking dishes that is). I wouldn't want to wash plates and silverware everyday. I WOULD rather wash dishes than clean a bathroom or dust.
ReplyDeleteYou bet we do. I hate hate hate washing dishes. I hate putting my hands in standing water, and even washing under a running tap grosses me out. We always had a dishwasher growing up, so I got "spoiled" (according to my husbands family).
ReplyDeleteOver the years we have lived in quite a few places, so it was hit and miss, whether there was one already there or not. Sometimes yes, sometimes no. At the present I don't have one, but will be moving soon and will have one then. I don't really mind washing so much, but I do like the cleanliness you get with a dishwasher.

ReplyDeleteMan I'm still drooling over the Lemon Marinated Chicken and here you go and post another one that looks good. Although I'll admit I'm a bigger chicken fan than a pork fan. DH would love this one I'm sure.
ReplyDeleteYes, I have a dishwasher. Can't imagine not having one. It's great for keeping the kitchen tidy. I hate having dishes out on the counter so I'd have to wash and dry AND put away immediately. The dishwasher is great for "holding" them till it's time to run it.
Any idea when yours will be back in action? As much as you cook, it's got to be a bummer washing all those dishes. My sis-in-law, who LOVES to cook, has decided that we're going to live together when we get old so she can cook and I'll clean up. I don't mind cleaning if I don't have to do cook too.
Not in the rotten little company rental we're in at the moment. I have a dishwasher at my 'real' house and I am missing it very much! We even bought a dishwasher up here with us and then found that it will not fit into this house at all so it's siting out in the shed being used as bench space for Hubby.
