Say good-bye to salmon
--Glazed Salmon


Glazed Salmon

1/4 cup honey
2 tablespoons low-sodium soy sauce
2 tablespoons lime juice
1 tablespoon Dijon mustard
4 (6-ounce) salmon fillets

In a small bowl, whisk together the honey, soy sauce, lime juice, and mustard. Marinate the salmon in the sauce in the refrigerator for several hours, or until ready to cook.

In a nonstick skillet coated with nonstick cooking spray, cook the salmon on each side, 3 to 5 minutes, until golden brown, crispy and just cooked through. Transfer salmon to a platter.

Add the remaining honey glaze to the skillet and simmer, stirring, until mixture comes to a boil. Return salmon to the pan, heat thoroughly, and serve immediately.

Makes 4 servings. Per serving: 272 cal, 35g pro, 19 g carb, 6g fat, 0g fiber, 88mg chol, 400mg sodium

Last night my husband nicely asked me to stop making salmon. He asked very nicely so I know he was serious. If he had been rude about it he knows he would fine himself eating salmon everyday. I'll stop making salmon but I'm going to try other fishes, even though at one point he generalized and said that he didn't like fish but I've seen him eat fish in the past.

His request had nothing to do with this recipe - he just doesn't care for salmon. He wasn't happy from the moment he saw salmon on this week's menu. This recipe was fine - not a standout but perfectly fine. I don't know why I chose a pan-fried recipe - the stink bothers me so much.

I'm taking a long, long weekend so I may be MIA for a day or two. Or maybe not. I'm taking the time off to get caught up with things and my blog is the one thing I'm not behind on because it's an escape from everything else. So, it would probably be a good thing to step back from it for a few days but I really don't wanna!

Blast From The Past: Easy Cream Puff Cake from last May. I made that for a Memorial Day cookout last year and it was a big hit. I'm thinking about making it again, yet there are so many new recipes out there I still haven't tried.

Question of the Day: Are there any foods you don't make because there are other people you cook for that don't care for them?

Well, I prefer to make things that my roommate will eat and since I LOVE tomatoes and she doesn't that is sometimes difficult. If I can do half-and-half then I'll do that, but if there is something I really want that has tomatoes, then I make it and she just finds something else to eat. Sad that your hubby doesn't want salmon...we just found a GREAT way to do it...grilled on cedar plank. OH, so good! Hopefully he'll like other fish...tilapia and flounder are good, as they are mild tasting unlike salmon.

LOL My family is so pathetic when it comes to what they like/dislike.

My 3 kids all have different tastes and it's very, very, very rare to find something everyone will eat. About a year ago I decided that most of the time I'm going to cook what *I* want and if they don't like it there's always pasta, peanut butter sandwiches and cereal.

Funny thing is I hardly ever make salmon because my boyfriend does not care for this either. I love it though so if we go out to eat I might end up ordering it.
Other foods/ingreds I tend to not cook with because of BF's aversion to them:
mushrooms and garlic--this is a tough one b/c so many recipes call for garlic but somehow, we seem to get by okay.

Sometimes I'm hesitant about trying out a new idea that I think I'll like but no one else will because then I'll end up eating the whole thing myself.

We don't eat much fish because I don't care for it. Scott won't eat fennel which makes me sad - I love it.

I'm with Hubby. I hate salmon, but suprisingly I love smoked salmon. I make some jewish foods that Robin hates but I love them so I make them.

Since my husband doesn't eat mushrooms, tomato sauce, apples, bananas (anything with a "mushy" consistency), tuna casserole - I either wait until he goes out of town or order it at a restaurant. Sad, too - I make a mean apple pie!

Oh yikes.. I'd be in a pickle if my husband asked me to stop making salmon. You are such a nice wife to listen to his wishes!

Nope - if they don't like it they can make something else! But... there are a bunch of things I don't make cos I don't like them and if they want them, well they can make 'em themselves! LOL

It's just my husband and I, and I only repeat recipes that we really love, so there are some things only one of us loves (and the other really dislikes), but I couldn't bear not making them again!!! For example, only my husband loves salads and only I love peanut butter desserts. I just make us two things to eat side by side when I am doing recipes like this. It is not more work because we eat leftovers in this house! And breads that might stale get frozen and thawed to order. Oh, and I divide recipes by two or four all the time, so I figure out how much one person can eat before it spoils and go from there. This is just for things that one person loves and the other person dislikes. I love hearing about how everyone handles this situation especially with multiple kids.
