My Ground Chicken Recipes

I don't see a lot of ground (minced) chicken recipes in my cookbooks, compared to other ground meats. It can be used in place of ground turkey or even ground beef but it does have a different flavor. I thought I'd do a round-up so that anyone looking for ground chicken recipes here can find them all in one place.

I can honestly say that not one of the ground chicken recipes that I've tried has been a disappointment. In fact, most, if not all, of them have been better than average. These aren't my best ground chicken recipes or my favorite ground chicken recipes, they're all my ground chicken recipes because they've all been good - no lie.

    I've only used ground turkey so far, and I prefer it over ground beef, but I wonder if ground chicken tastes even better! Those barbecue chicken patties with mushrooms sound tasty! :)

  8. Ground Chicken is so much better than ground turkey in my opinion. The turkey has a strong flavor that is just not present in the chicken. For someone who is just switching over from ground beef to a healthy alternative, ground chicken will allow the transition much easier.

    Yesterday I had ground chicken I had to do something with and decided I would mix 1 pound of the ground chicken with 1 cup of leftover cooked rice, egg, salt, pepper and dried onion. Dredged it in a new product by Morton Season All Crusting and made into balls that I browned in a little olive oil.
    After I added a small can of chunk pineapple and sweet stir fry sauce. Served over rice and surprisely we all really liked it.

    I have another addition for you. If you want a really fast ground chicken recipe (you can really use any ground meat) with few ingredients try lettuce wraps. Its ground chicken cooked with sauted onions and some soy sauce and oyster sauce (I don't really measure), then i add a can of mung beans. Serve it in a romain lettuce leaf and it is like P.F. Chang's version but much healthier!

    I've been using ground chicken as an alternitive for some time and agree that it has a milder taste compared to turkey. I do notice that it does not absorb liquid as well as turkey or beef. I just cut back on the amount that I would normaly use. always a hit at my house. Can't wait to try out the chicken burgers!!!

  17. We've been using ground chicken for some time as a ground beef substitute, but now we're doing the low carb thing..looking for more I can do ! These look wonderful ! Maybe take away the bread/noodles, etc !

    If you like pesto, mix 2 TBS of jar pesto with ground chicken and parmesan cheese. Make patties and grill burgers. When ready to serve, mix mayo and pesto to spread on bun. Top with lettace, tomato and red onion. You have a great but easy chicken pesto burger.

    i always make chili con carni with ground chicken and use a combo of 1/2 ground breast and 1/2 ground thigh. I also mince mushrooms to a fine consistancy and fry it with the chicken so the chicken doesn't dry out. Mushrooms keep everything moist but my family hates mushrooms. this way they don't even know that they are in there.

    I don't know if any of you have tried the ground chicken from Good Shepherd Poultry. It has the best nutritional values. It also is the best ground chicken that I have ever tasted. Their ground chicken is made from Heritage chickens. That means that they are not scientifically altered in any way.

    I buy ground chicken breast when it's on "red tag" sale at the supermarket. I find the best way to use it is to stuff red and green bell peppers, which are in season and plentiful right now. Just brown the chicken with some onions and garlic, stir in some leftover rice and tomato sauce, fresh or dried herbs. Stuff peppers and sprinkle with parmesan. Cover and bake for an hour or so. Delicious!
